  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in a slow cooker.
  2. Add the chicken broth, diced tomatoes, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken using two forks.
  5. Mix the shredded chicken with the juices in the slow cooker.
  6. Serve in tacos, burritos, or over rice.
