  • 2 medium zucchinis, sliced
  • 1 lb chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced zucchinis, diced chicken, cherry tomatoes, olives, and garlic.
  3. Drizzle with olive oil and sprinkle with oregano, salt, and pepper. Toss to coat.
  4. Transfer the mixture to a baking dish and spread evenly.
  5. Top with crumbled feta cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the zucchinis are tender.
  7. Remove from the oven and let it cool for a few minutes before serving.
