  • 1 lb chicken breast
  • 2 cups broccoli florets
  • 1 cup cauliflower florets
  • 1 cup bell peppers, chopped
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Place the chicken breast at the bottom of the crockpot.
  2. Add the broccoli, cauliflower, and bell peppers on top of the chicken.
  3. Pour the chicken broth over the vegetables and chicken.
  4. Sprinkle garlic powder, onion powder, salt, and pepper over the mixture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. If using, add shredded cheese during the last 30 minutes of cooking.
  7. Once cooked, shred the chicken and mix everything together before serving.

Notes

  • Feel free to add other low-carb vegetables like zucchini or spinach.
  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a spicier version, add red pepper flakes or jalapeños.
