Lemongrass Chicken Rice Paper Rolls are a refreshing and healthy dish, perfect for a light meal or appetizer. These rolls are filled with tender lemongrass chicken, fresh vegetables, and herbs, all wrapped in delicate rice paper.

  • 200g chicken breast, thinly sliced
  • 2 stalks lemongrass, finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 8 rice paper wrappers
  • 1 cup lettuce leaves, shredded
  • 1 cup carrots, julienned
  • 1 cup cucumber, julienned
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • Peanut dipping sauce (for serving)

Instructions

  1. In a bowl, combine the chicken, lemongrass, soy sauce, fish sauce, and sugar. Marinate for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat until fully cooked, about 5-7 minutes. Let it cool.
  3. Prepare a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10 seconds until soft.
  4. Place the softened rice paper on a clean surface. Add a few pieces of chicken, lettuce, carrots, cucumber, mint, and cilantro in the center.
  5. Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top.
  6. Repeat with the remaining wrappers and filling.
  7. Serve the rolls with peanut dipping sauce.

Notes

  • For a vegetarian option, substitute chicken with tofu.
  • Make sure to keep the rice paper wrappers covered with a damp cloth to prevent them from drying out.
  • These rolls can be made ahead of time and stored in the refrigerator for a few hours.
