  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can tomato sauce (8 oz)
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 can black olives, sliced
  • 1 cup bell peppers, diced
  • 1 cup shredded cheese (optional)
  • 1 avocado, diced (for topping)
  • Fresh cilantro (for garnish)

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, tomato sauce, beef broth, and taco seasoning.
  4. Add the black olives and bell peppers, and bring the mixture to a boil.
  5. Reduce heat and let it simmer for 20-30 minutes.
  6. Serve hot, topped with shredded cheese, diced avocado, and fresh cilantro.
