  • 8 oz rice noodles
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 tbsp soy sauce
  • 1 tbsp chili paste
  • 1 tsp black pepper
  • 1/2 tsp salt

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Stir in the sliced bell pepper and zucchini, cooking until tender.
  5. Add cherry tomatoes, cooked noodles, soy sauce, chili paste, black pepper, and salt.
  6. Toss everything together and cook for an additional 2-3 minutes.
  7. Remove from heat and stir in fresh basil before serving.

  • Adjust the spice level by adding more or less chili paste.
