  • 2 cups grated carrots
  • 1 cup honey
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine grated carrots and honey.
  3. Add melted butter, eggs, and vanilla extract to the carrot mixture and mix well.
  4. In another bowl, whisk together flour, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in the chopped walnuts.
  7. Pour the mixture into a greased pie dish.
  8. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the pie cool before serving.
