A delicious and comforting creamy white chicken lasagna soup that combines the flavors of lasagna in a warm, hearty soup.

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, sauté until softened.
  2. Add chicken breasts and cook until browned on both sides.
  3. Pour in chicken broth and add white beans and Italian seasoning. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, or until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot.
  6. Add heavy cream and broken lasagna noodles. Cook until noodles are tender.
  7. Stir in ricotta, mozzarella, and Parmesan cheese until melted and creamy.
  8. Season with salt and pepper to taste. Serve hot.
