A delicious and easy-to-make blueberry French toast casserole that is perfect for breakfast or brunch.

  • 2 cups fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt.
  3. Add the cubed French bread and blueberries to the egg mixture, gently folding to combine.
  4. Pour the mixture into a greased 9×13 inch baking dish.
  5. Cover and refrigerate for at least 1 hour or overnight.
  6. Bake uncovered for 45-50 minutes, or until the top is golden brown and the casserole is set.
