- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup green onions, chopped (for garnish)
- Set the Instant Pot to sauté mode and heat the olive oil.
- Add the chopped onion and garlic, sauté until translucent.
- Add the diced potatoes, Cajun seasoning, salt, and pepper, stirring to combine.
- Pour in the broth and close the lid of the Instant Pot.
- Set to manual high pressure for 10 minutes.
- Once done, perform a quick release of the pressure.
- Stir in the heavy cream and adjust seasoning if necessary.
