  • 1/2 cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup chopped green onions
  • Salt and pepper to taste
  • Cooked bacon bits for topping

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add flour and whisk until smooth, cooking for about 2 minutes.
  3. Gradually add broth, stirring constantly until thickened.
  4. Add diced potatoes and bring to a boil. Reduce heat and simmer until potatoes are tender.
