Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 cup black beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla strips for garnish
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the diced onion and minced garlic until translucent.
  2. Add the shredded chicken, diced tomatoes, corn, black beans, chicken broth, cumin, chili powder, salt, and pepper. Stir well.
  3. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
  4. Stir in the heavy cream and let it cook for an additional 5 minutes.
  5. Serve hot, garnished with tortilla strips and fresh cilantro.
