A comforting and hearty soup that combines the flavors of traditional cabbage rolls in a warm, nourishing broth.

Ingredients

  • 1 medium head of cabbage, chopped
  • 1 lb ground beef
  • 1 cup rice, uncooked
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
  2. Add ground beef to the pot and cook until browned.
  3. Stir in chopped cabbage, diced tomatoes, tomato sauce, beef broth, rice, paprika, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 30-40 minutes, or until the cabbage is tender and the rice is cooked.
  5. Adjust seasoning to taste and serve hot.

Notes

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Freezes well for up to 3 months.
