- 1 cup pumpkin puree
- 1/2 cup almond flour
- 1/2 cup oat flour
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
- In a large bowl, mix together the pumpkin puree, honey (or maple syrup), and applesauce until well combined.
- In another bowl, whisk together the almond flour, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fill each muffin cup about 3/4 full with the batter.
- Bake for 12-15 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before removing from the tin.
