Delicious and healthy pumpkin donut holes that are perfect for a guilt-free treat.

  • 1 cup pumpkin puree
  • 1/2 cup almond flour
  • 1/2 cup oat flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a large bowl, mix together the pumpkin puree, honey (or maple syrup), and applesauce until well combined.
  3. In another bowl, whisk together the almond flour, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fill each muffin cup about 3/4 full with the batter.
  6. Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  7. Let cool for a few minutes before removing from the tin.

Notes

  • These donut holes can be stored in an airtight container for up to 5 days.
  • For added flavor, consider rolling them in cinnamon sugar after baking.
