Ingredients

  • 1 cup brown rice
  • 2 medium sweet potatoes, diced
  • 2 chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups spinach
  • 1 avocado, sliced

Instructions

  1. Cook the brown rice according to package instructions.
  2. Preheat the oven to 400°F (200°C).
  3. Toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet.
  4. Bake sweet potatoes for 25-30 minutes or until tender.
  5. In a skillet, cook the diced chicken over medium heat until fully cooked.
  6. In a bowl, layer the cooked rice, sweet potatoes, chicken, spinach, and avocado.
