- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup raisins or walnuts (optional)
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, grated carrots, almond flour, honey or maple syrup, melted coconut oil, and vanilla extract.
- Add the baking powder, cinnamon, nutmeg, and mix until well combined.

- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden brown.
