  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup raisins or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, grated carrots, almond flour, honey or maple syrup, melted coconut oil, and vanilla extract.
  3. Add the baking powder, cinnamon, nutmeg, and mix until well combined.
  4. If desired, fold in raisins or walnuts.
  5. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until the edges are golden brown.
  7. Let cool before serving.
