Delicious and festive gingerbread cookies made healthier without sacrificing flavor.

Ingredients

  • 1 ½ cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • ¼ cup coconut oil, melted
  • ¼ cup honey or maple syrup
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the whole wheat flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the melted coconut oil, honey (or maple syrup), egg, and vanilla extract.
  4. Combine the wet and dry ingredients until a dough forms.
  5. Roll out the dough on a floured surface and cut into desired shapes.
  6. Place cookies on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until edges are firm.
  8. Let cool before decorating if desired.
