Ingredients

  • 2 cups vegetable broth
  • 1 cup roasted sweet potatoes, cubed
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, cooked
  • 1 avocado, sliced

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
  4. In a large bowl, combine roasted sweet potatoes, black beans, corn, and cooked quinoa.
  5. Drizzle with olive oil and lime juice; season with salt and pepper.
  6. Toss gently to combine all ingredients.
  7. Top with sliced avocado and crumbled feta cheese before serving.
