Halloween Smoky Batwing Quesadillas are a fun and spooky treat perfect for Halloween festivities, featuring a cheesy filling and bat-shaped design.

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar and mozzarella blend)
  • 1 cup cooked and shredded chicken
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray or oil for frying

Instructions

  1. In a mixing bowl, combine shredded cheese, chicken, black beans, bell peppers, onions, smoked paprika, garlic powder, salt, and pepper.
  2. Lay one tortilla flat and place a generous amount of the filling on one half of the tortilla.
  3. Fold the tortilla over to create a half-moon shape.
  4. Using a bat-shaped cookie cutter, cut out bat shapes from the folded tortilla.
  5. Heat a skillet over medium heat and spray with cooking oil.
  6. Cook the batwing quesadillas for 2-3 minutes on each side until golden brown and the cheese is melted.
  7. Remove from the skillet and let cool slightly before serving.
  8. Serve with salsa or guacamole for dipping.

  • Feel free to customize the filling with your favorite ingredients.
  • These quesadillas can be made ahead of time and reheated in the oven.
  • For a vegetarian option, omit the chicken and add more beans or vegetables.
