- 1 cup Arborio rice
- 2 medium beets, roasted and pureed
- 4 cups vegetable broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
- In a saucepan, heat the vegetable broth and keep it warm over low heat.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add Arborio rice to the skillet, stirring for 1-2 minutes until lightly toasted.
- Pour in the white wine and stir until absorbed.
- Gradually add warm vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more.
- After about 15 minutes, stir in the beet puree and continue cooking until the rice is creamy and al dente.
- Remove from heat and stir in Parmesan cheese. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
