Deliciously gooey vegan pumpkin blondies made in one bowl, perfect for fall.

Ingredients

  • 1/2 cup almond butter
  • 1/2 cup maple syrup
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin spice
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix together the pumpkin puree, almond butter, maple syrup, and brown sugar until smooth.
  3. Add the vanilla extract, baking soda, salt, and pumpkin spice, and mix well.
  4. Gradually stir in the flour until just combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let cool before cutting into squares and serving.
