A classic French dish made with caramelized onions, beef broth, and topped with melted cheese and crusty bread.

  • 4 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 8 cups beef broth
  • 1 cup dry white wine
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 8 slices of French bread
  • 2 cups grated Gruyère cheese

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the sliced onions and sugar, cooking until the onions are caramelized, about 30 minutes.
  3. Pour in the white wine and scrape the bottom of the pot to deglaze.
  4. Add the beef broth and thyme, then season with salt and pepper.
  5. Simmer for 30 minutes to allow flavors to meld.
  6. Preheat the oven to 350°F (175°C).
  7. Place the French bread slices on a baking sheet and toast in the oven until golden brown.
  8. To serve, ladle the soup into bowls, top with toasted bread, and sprinkle with Gruyère cheese.
  9. Place the bowls under the broiler until the cheese is bubbly and golden.

Notes

  • For a vegetarian version, substitute beef broth with vegetable broth.
  • Make sure to use a good quality cheese for the best flavor.
  • Can be made ahead and reheated before serving.
