  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup dry white wine
  • 1 tablespoon fresh thyme leaves
  • 1 bay leaf
  • 1 baguette, sliced
  • 2 cups grated Gruyère cheese

Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the sliced onions, sugar, and salt. Cook, stirring frequently, until the onions are caramelized, about 30-40 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Pour in the white wine and scrape the bottom of the pot to deglaze.
  5. Add the beef broth, thyme, and bay leaf. Bring to a simmer and cook for 20 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. Toast the baguette slices until golden brown.
  8. Remove the bay leaf from the soup and ladle the soup into oven-safe bowls.
  9. Top each bowl with a slice of toasted baguette and sprinkle with Gruyère cheese.
  10. Bake in the oven until the cheese is bubbly and golden, about 10-15 minutes.
