Deliciously fluffy pancakes made with Greek yoghurt and mixed berries, topped with chocolate chips for a delightful breakfast treat.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup Greek yoghurt
  • 1/2 cup milk
  • 1 large egg
  • 1 tablespoon honey
  • 1 cup mixed berries (fresh or frozen)
  • 1/2 cup chocolate chips

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, mix the Greek yoghurt, milk, egg, and honey until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Gently fold in the mixed berries and chocolate chips.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with additional berries and syrup if desired.

Notes

  • For a healthier option, use whole wheat flour instead of all-purpose flour.
