  • Fresh spinach, a handful
  • Chopped fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Add minced garlic and bell pepper, cooking until softened.
  4. Stir in crumbled tofu, turmeric, cumin, salt, and pepper.
  5. Cook for about 5-7 minutes, stirring occasionally.
