  • 1 cup Spanish rice
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the onion and garlic until translucent.
  2. Add the diced bell peppers and cook for another 5 minutes.
  3. Stir in the Spanish rice, cumin, paprika, salt, and pepper, and cook for 2 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  6. Stir in the black beans and cook for an additional 5 minutes.
  7. Garnish with fresh cilantro before serving.
