- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tbsp ground ginger
- 1 tbsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup brewed coffee, cooled
- 1/2 cup chocolate chips (optional)
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and nutmeg.
- In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and brewed coffee to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- If using, fold in the chocolate chips.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden.
