  • 1 can (14.5 oz) diced tomatoes

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, bell peppers, carrots, and celery; sauté until softened.
  3. Add chopped cabbage and cook for another 5 minutes.
  4. Stir in diced tomatoes, vegetable broth, garlic powder, salt, pepper, and thyme.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
  6. Adjust seasoning to taste and serve hot.
