A quick and crunchy vegan wrap filled with fresh fall vegetables and creamy hummus, perfect for a healthy meal.

Ingredients

  • 1 large whole wheat tortilla
  • 1/2 cup hummus
  • 1/2 cup shredded carrots
  • 1/2 cup sliced bell peppers
  • 1/2 cup cucumber, sliced
  • 1/4 cup red cabbage, shredded
  • 1/4 cup spinach leaves
  • Salt and pepper to taste

Instructions

  1. Spread the hummus evenly over the whole wheat tortilla.
  2. Layer the shredded carrots, sliced bell peppers, cucumber, red cabbage, and spinach on top of the hummus.
  3. Season with salt and pepper to taste.
  4. Roll the tortilla tightly to form a wrap.
  5. Slice the wrap in half and serve immediately.
