A simple and delicious creamy Tuscan chicken recipe made in a crockpot, perfect for a quick dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup spinach, fresh
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Place the chicken breasts in the crockpot.
  2. In a bowl, mix together the heavy cream, chicken broth, sun-dried tomatoes, garlic powder, Italian seasoning, salt, and pepper.
  3. Pour the mixture over the chicken in the crockpot.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. In the last 30 minutes of cooking, add the fresh spinach and Parmesan cheese.
  6. Once cooked, shred the chicken and mix it back into the sauce before serving.
