- 2 lbs chicken thighs
- 1 cup teriyaki sauce
- 1 cup pineapple chunks
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 green onions, chopped (for garnish)
- Place the chicken thighs in the crockpot.
- In a bowl, mix together the teriyaki sauce, pineapple chunks, bell pepper, onion, garlic, and ginger.
- Pour the mixture over the chicken in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken and mix it with the sauce.
- Serve over rice and garnish with green onions.
Notes
- For a thicker sauce, remove the lid during the last hour of cooking.
