A simple and delicious recipe for Teriyaki Chicken made in a crockpot with minimal effort.

Ingredients

  • 2 lbs chicken thighs
  • 1 cup teriyaki sauce
  • 1 cup pineapple chunks
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 2 green onions, chopped (for garnish)

Instructions

  1. Place the chicken thighs in the crockpot.
  2. In a bowl, mix together the teriyaki sauce, pineapple chunks, bell pepper, onion, garlic, and ginger.
  3. Pour the mixture over the chicken in the crockpot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken and mix it with the sauce.
  6. Serve over rice and garnish with green onions.

Notes

  • For a thicker sauce, remove the lid during the last hour of cooking.
  • Serve with steamed vegetables for a complete meal.
  • Can substitute chicken thighs with chicken breasts if preferred.
