A delightful recipe for bean and cheese enchiladas that are easy to make and packed with flavor.

  • 2 cups refried beans
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 corn tortillas
  • 1 cup enchilada sauce
  • 1/2 cup chopped onions
  • 1/2 cup sour cream (optional)
  • 1/4 cup chopped cilantro (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the refried beans with half of the shredded cheese and chopped onions.
  3. Warm the corn tortillas in a skillet until pliable.
  4. Spread a spoonful of the bean mixture onto each tortilla, roll them up, and place them seam-side down in a baking dish.
  5. Pour the enchilada sauce over the rolled tortillas.
  6. Sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
