  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the oil and eggs until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the grated carrots, crushed pineapple, and walnuts if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. While the bars are baking, prepare the cream cheese frosting by beating together the cream cheese and butter until smooth.
  9. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
  10. Once the bars are cool, spread the cream cheese frosting on top.
  11. Cut into squares and serve.
