Crockpot Lasagna Soup is a comforting and hearty dish that combines all the flavors of traditional lasagna in a convenient soup form, perfect for family dinners.

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a skillet, brown the ground beef with the chopped onion and minced garlic until fully cooked.
  2. Transfer the beef mixture to the crockpot.
  3. Add crushed tomatoes, beef broth, Italian seasoning, salt, and pepper to the crockpot.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the broken lasagna noodles.
  6. Once the noodles are cooked, stir in the ricotta cheese and half of the mozzarella cheese.
  7. Top with the remaining mozzarella and Parmesan cheese before serving.
