A comforting and flavorful Crockpot French Onion Soup that is perfect for chilly days.

Ingredients

  • 4 large onions, thinly sliced
  • 4 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 bay leaf
  • 8 slices of French bread
  • 2 cups shredded Gruyère cheese

Instructions

  1. In a skillet, melt butter and olive oil over medium heat.
  2. Add sliced onions, sugar, salt, and pepper; cook until onions are caramelized.
  3. Transfer the caramelized onions to the crockpot.
  4. Add beef broth, white wine, thyme, and bay leaf to the crockpot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Before serving, toast the French bread slices.
  7. Serve the soup in bowls, top with toasted bread and shredded cheese.
  8. Broil in the oven until the cheese is bubbly and golden.

Notes

  • For a vegetarian version, use vegetable broth instead of beef broth.
  • Feel free to adjust the amount of cheese to your liking.
