Crockpot Birria Tacos are a flavorful and easy-to-make dish that combines tender, slow-cooked meat with delicious spices, perfect for taco lovers.

Ingredients

  • 3 lbs beef chuck roast
  • 2 cups beef broth
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 bay leaves
  • 12 corn tortillas
  • Chopped cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Soak the dried chiles in hot water for about 15 minutes until softened.
  2. In a blender, combine the softened chiles, beef broth, onion, garlic, cumin, oregano, black pepper, and salt. Blend until smooth.
  3. Place the beef chuck roast in the crockpot and pour the blended sauce over it.
  4. Add the bay leaves to the crockpot.
  5. Cover and cook on low for 8 hours or until the meat is tender and easily shredded.
  6. Once cooked, shred the meat with two forks and mix it with the sauce in the crockpot.
  7. Heat the corn tortillas on a skillet and fill them with the shredded birria meat.
  8. Garnish with chopped cilantro and serve with lime wedges.

Notes

  • For extra flavor, you can add a splash of apple cider vinegar to the sauce.
  • Serve with a side of consomé (the cooking liquid) for dipping.
  • Leftovers can be stored in the refrigerator for up to 3 days.
