Delicious and crispy patties made from sweet potatoes and red lentils, perfect for a quick vegan dinner.

Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Boil the sweet potatoes until tender, then mash them in a bowl.
  2. In a separate pot, cook the red lentils in water until soft, then drain.
  3. Add the cooked lentils, breadcrumbs, onion, garlic, cumin, paprika, salt, and pepper to the mashed sweet potatoes and mix well.
  4. Form the mixture into patties.
  5. Heat oil in a pan over medium heat and fry the patties until golden brown on both sides.
  6. Serve hot with your favorite dipping sauce.

Notes

  • For a gluten-free option, use gluten-free breadcrumbs.
  • These patties can be baked instead of fried for a healthier version.
