  • 4 cups water
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup cranberry sauce
  • 1 tablespoon honey
  • 1 tablespoon lemon juice

Instructions

  1. In a pot, bring water and salt to a boil.
  2. Slowly whisk in the polenta, stirring constantly until thickened.
  3. Pour the polenta into a greased baking dish and let it cool completely.
  4. Once cooled, cut the polenta into stacks or rounds.
  5. Heat olive oil in a skillet over medium heat and fry the polenta stacks until crispy on both sides.
  6. In a bowl, mix cranberry sauce, honey, and lemon juice to create the relish.
  7. Top each crispy polenta stack with a spoonful of cranberry relish.
  8. Garnish with fresh herbs if desired and serve warm.
