Ingredients

  • 4 large carrots, chopped
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until translucent.
  2. Add chopped carrots and diced potatoes to the pot, stirring for a few minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer until the vegetables are tender.
  4. Once the vegetables are cooked, use an immersion blender to blend the soup until smooth.
  5. Stir in the coconut milk, salt, pepper, thyme, and lemon juice. Heat through and adjust seasoning as needed.
  6. Serve warm, garnished with fresh herbs if desired.
