  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet.
  3. Cook chicken for 6-7 minutes on each side until golden brown and cooked through.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add garlic and sauté for 1 minute.
  6. Add sun-dried tomatoes and spinach, cooking until spinach wilts.
  7. Pour in heavy cream and stir in Parmesan cheese and Italian seasoning.
  8. Return chicken to the skillet and simmer for 5 minutes.
