A warm and comforting creamy potato soup, perfect for cozy evenings. This recipe includes an option to add bacon for extra flavor.

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Bacon (optional)

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the diced potatoes and vegetable broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the heavy cream and season with salt and pepper.
  7. If using bacon, cook it separately and crumble on top before serving.

Notes

  • For a vegan version, substitute heavy cream with coconut milk.
  • Adjust the thickness of the soup by adding more or less broth.
  • Garnish with chives or parsley for added flavor.
