  • 2 salmon fillets

  • Fresh parsley for garnish

Instructions

  1. In a large pot, bring vegetable broth to a boil and add orzo pasta. Cook according to package instructions until al dente.
  2. In a separate pan, heat olive oil and butter over medium heat. Add the salmon fillets and cook for about 4-5 minutes on each side until cooked through. Remove from pan and set aside.
  3. In the same pan, add sweet corn and sauté for 2-3 minutes. Then, pour in the heavy cream and stir until combined.
  4. Add the cooked orzo to the corn and cream mixture, stirring well to combine. Season with salt and pepper to taste.
  5. Serve the creamed corn orzo topped with the cooked salmon and garnish with fresh parsley.
