2 cups vegetable broth
1/2 cup dried cranberries
1/2 cup pecans, chopped
1 small onion, diced
2 cloves garlic, minced
2 tablespoons olive oil

Instructions
Rinse the wild rice under cold water.
In a pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
Add the wild rice and vegetable broth to the pot, bring to a boil, then reduce heat and simmer for about 45 minutes or until the rice is tender.
Stir in the dried cranberries and chopped pecans, and season with salt and pepper.
Remove from heat and let it sit for 5 minutes before fluffing with a fork.
