Cranberry Pecan Wild Rice Pilaf is a delicious and nutritious dish that combines the earthy flavors of wild rice with the sweetness of cranberries and the crunch of pecans.

Ingredients

  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the wild rice under cold water.
  2. In a pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the wild rice and vegetable broth to the pot, bring to a boil, then reduce heat and simmer for about 45 minutes or until the rice is tender.
  4. Stir in the dried cranberries and chopped pecans, and season with salt and pepper.
