  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon turmeric powder
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in minced garlic, grated ginger, and turmeric powder; cook for 1-2 minutes.
  4. Add pumpkin puree and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in coconut milk and season with salt and pepper.
