  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic, and sauté until softened.
  2. Add the chicken breasts and cook until browned on all sides.
  3. Sprinkle flour over the chicken and vegetables, stirring to combine.
  4. Slowly pour in the chicken broth, stirring constantly to avoid lumps.
  5. Add potatoes, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in the heavy cream and frozen peas, cooking for an additional 5 minutes until heated through.
  7. Remove chicken, shred it, and return it to the pot. Adjust seasoning if necessary.
