1 pound ground turkey
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
6 cups chicken broth
2 carrots, diced
2 celery stalks, diced
1 onion, chopped
1 cup spinach, chopped
1 can diced tomatoes (14.5 oz)
Fresh parsley for garnish
Instructions
In a bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into small meatballs.
In a large pot, heat a little oil over medium heat and add the meatballs. Cook until browned on all sides, then remove and set aside.
In the same pot, add onion, carrots, and celery. Sauté until softened.
Add chicken broth, diced tomatoes, and the meatballs back into the pot. Bring to a boil.
Reduce heat and let simmer for 20 minutes.
Add spinach and cook for an additional 5 minutes.
Serve hot, garnished with fresh parsley.
Notes
Feel free to add other vegetables like zucchini or green beans.
This soup can be made ahead and stored in the refrigerator for up to 3 days.
