A warm and hearty Polish potato soup infused with fresh dill, perfect for a comforting meal.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 tablespoons butter
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the diced potatoes and sliced carrots, cooking for a few minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until the potatoes are tender, about 20 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Stir in the heavy cream and fresh dill, and season with salt and pepper.
