A warm and hearty butternut squash lasagna soup that combines the flavors of traditional lasagna with the comforting texture of soup.

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (15 oz) ricotta cheese
  • 2 cups spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 8 lasagna noodles, broken into pieces
  • 1 cup mozzarella cheese, shredded

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the diced butternut squash and cook for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the broken lasagna noodles and cook until tender.
