Delicious and soft pumpkin cookies topped with a sweet maple glaze, perfect for fall.

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup powdered sugar (for glaze)
  • 2 tbsp maple syrup (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the pumpkin puree and egg, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. While the cookies cool, prepare the glaze by whisking together the powdered sugar and maple syrup until smooth.
  9. Drizzle the glaze over the cooled cookies before serving.

Notes

  • Store cookies in an airtight container for up to a week.
  • For a spicier flavor, add a pinch of ground ginger.
  • These cookies can be frozen for up to 3 months.
