Ingredients

  • 3-4 lbs chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the chuck roast with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat.
  4. Sear the roast on all sides until browned.
  5. Remove the roast and set aside. In the same pot, add onions and garlic, sautéing until softened.
  6. Add carrots and celery, cooking for a few more minutes.
  7. Return the roast to the pot, add beef broth, thyme, and rosemary.
  8. Cover the pot and transfer it to the oven.
  9. Bake for 3-4 hours, or until the meat is tender and easily pulls apart.
  10. Let it rest for 10-15 minutes before slicing and serving.

  • For extra flavor, marinate the roast overnight.
  • Serve with mashed potatoes or crusty bread.
